This is a very simple recipe, that takes less than 45 minutes total to prepare. It is a nice wrm-weather meal along with some good bread, and maybe a light salad if you feel ambitious.
Bring the water to a boil, add the red lentils and other ingredients in the first group. Simmer until lentils are pretty much fallen apart, around 40 minutes.
Heat olive oil to medium low. Saute the garlic until browning, then add onion and celery and saute until onion becoes translucent. Add to the lentils along with dill, salt and pepper to taste.
Stir in the lemon juice just before serving.
