This works well as a sauce over mixed veggies or falafel in pita bread sandwiches. It also works as a sauce over rice.
You can vary the taste of the sauce by juggling the proportions of lemon, garlic, salt and tahini, to make it as creamy or as sharp as you wish.
Combine all ingredients in a bowl, and stir with a fork until it smoothes out. Let sit at least a half-hour before using - it will get a bit thicker and smoother as it sits.
